The Story

For Matt, hot sauce began with work trips to the Southwest, an appreciation for spice incomparable to our frigid climate, and a return trip to Upstate New York with ideas. Years of recipe development ensued, followed by more development, then some more, then some more, ending with his fiancée telling him to quit tampering with perfection already. It was not without its challenges. He was faced with sneezing fits from the dog when the vinegar fumes hit, a stripping of cabinet handle coatings from the acidic sauce drips, and constant demands from his coworkers for more sauce. Not to mention finding a bottling system that could handle small chunks of ingredients, because chunks have flavor, and to hell with filtering out the flavor. OKSC is made in a town like yours by a guy who is just the right amount of “off.”

The Sauce

The sauce is good; that’s it! Despite its name, Off Kilter Sauce focuses on the right balance of ingredients and provides each bottle with a well-rounded and robust flavor profile.
